GREEK BOWLS MEAL PREP

These bowls combine all of my favorite Greek flavors! It’s got marinated chicken breast, delicious fresh vegetables, perfectly cooked brown rice and a fresh creamy homemade tzatziki sauce.

This recipe post will be a little looser as it won’t have a recipe card with specific amounts for things. I’ll show you how I make each component for the bowls and that way you’ll be able to make as much or as little of each item depending on how many bowls you’re wanting to make.

I start of by marinating chicken breast in a little of my Greek Vinaigrette & Marinade for about an hour while I start working on my other components.

Next I make a batch of brown rice using the pasta method from this recipe.

After that, I peel and dice up some cucumber then toss with a couple spoonfuls of my greek vinaigrette. I also thinly slice some red onion and cut some grape tomatoes in half. You can toss the tomato and onion in with the vinaigrette and cucumbers too if you prefer, I just like to do them separate.

I like to make my own tzatziki (I use this recipe) but you can 100% use store bought for these.

After the chicken has had a chance to marinate, I sear the breast well on both sides in a pan on medium high heat then finish cooking them in the oven (375 degrees for about 15 minutes, until internal temp of chicken is 165).

Lastly, you can either keep the components separate in the fridge and build the bowls when you’re ready to eat them or portion the components out so you can grab and go!
