MEAL PREP MONDAY 6.6.22

Every Monday I show you what I bought at my local market and what ingredients I was able to prep for the week ahead with those items. I’ll then show you how I mix and matched those prepped ingredients to make delicious meals throughout the week,

My prep is used to make breakfasts and lunches during the week as well as the occasional app or cocktail during the weekends depending on what we have going on. For now, we order Hello Fresh to make our dinners throughout the week so those meals are already take care of. I’m thinking about cancelling that after this week though so there will be even more coming to meal prep in the future!

Here’s what I brought home from the market this past week:

From these items, this is what I prepped/made:

  • Oven baked bacon - I also strained and saved the fat from this to make a vinaigrette at another time

  • Pasta Salad (Pasta leftover from this meal prep, corn leftover from this meal prep, spinach, chopped bacon and quartered tomatoes)

  • Turkey Sausage - I made 4 patties that I froze for next week and browned 1/2 lb of ground sausage for this week

  • BBQ Shredded Chicken - I made my air fryer shredded chicken then tossed with a couple tablespoons of bbq sauce

  • Diced watermelon and strawberries

  • Cole Slaw Dressing

  • Hard Boiled Eggs

  • Home fries

  • Washed cherry tomatoes

  • Dice onion and red bell pepper

I prepped a little more than usual this week because of Memorial Day. I chopped up one of the pieces of bacon and sprinkled it on top of deviled eggs I made from the hard boiled eggs. I tossed some of the coleslaw dressing with shredded cabbage and carrots as another side along with some of the strawberries and watermelon. We used the diced onion on our hot dogs that day also.

For breakfasts throughout the rest of the week I started off with an egg white omelet using the diced onion and bell pepper with spinach. I reheated a couple slices of bacon and tossed some of the home fries I made with the last bit of feta leftover from the week before’s prep.

For the end of the week I made an egg white scramble with the diced onion, bell pepper, home fries and the ground turkey sausage. I mixed the fruits together and had those on the side.

For lunches I started the week with the pasta salad I made tossed with a little ranch dressing.

The rest of the week I made the shredded BBQ chicken with coleslaw or BLTs on Ezekiel bread with some sliced avocado.
