KALE & QUINOA PATTIES

This recipe is a great vegetarian dish that’s full of some of my favorite summer flavors. The pan fried outsides give the quinoa a delicious toasted nutty flavor, the lemon & cilantro give a bright note that perfectly balances the heavier flavors of the parmesan cheese and creamy avocado.

A bonus for this recipe is that it makes 12 generously sized patties which means it’s perfect for feeding a larger group or perfect for dinner & leftovers if you’re cooking for two like me!
