MEAL PREP MONDAY 7.18.22

This week’s meal prep is one of my favorites for summer. It’s a few simple greek inspired ingredients put together to make 5 days worth of either lunch or dinner. I love kabobs but we don’t have a grill. I’ve played around with making them in the oven and this is so easy and delicious. I make kabobs with greek marinated chicken, peppers and onions in the oven and then I make brown rice and a cucumber onion salad. I pair all this with store bought tzatziki and it’s an easy, veggie filled, bursting with flavor meal. All of the components are great to prep and last for the full week.

I started off by making a greek marinade and added it to a bag with 2 diced chicken breast.

While that marinates, I cut up a red bell pepper and red onion into small squares. I the layer the chicken and veggies on metal skewers I got for $5 at Big Lots and put them on a foil lined baking sheet.

I baked these in a preheated 450 degree oven for 5 minutes, flipped and baked for another 5 minutes. I then turned on my oven’s broiler and broiled for a few minutes on each side until there was a slight char on the veggies and the chicken got a little crust on it.

These skewers are awesome because you push the small metal disc by the springs and it pushes everything right off. I stored the chicken and veggies in a container in the fridge.

Next, I made some brown rice using the Pasta Method from this recipe. I also chopped up some cucumber, thinly sliced some red onion and tossed them with some red wine vinegar, olive oil, salt and pepper for a second side. I purchased store-bought tzatziki and served that with the meal prepped items.
