MEAL PREP MONDAY 5.30.22

Welcome to another Meal Prep Monday. If you missed last week’s, definitely go back and check out that post! I’ve also added a section to the site’s menu so you can easily access these posts anytime.

We’ll start with the ingredients I brought home from the local market:

From these items, here’s what I prepped/made:

  • Strawberry Chia Seed Jam (Strawberries, Lemon Juice, Chia Seeds & Stevia)

  • Greek Vinaigrette (Red Wine Vinegar, Lemon Juice, Olive Oil, Italian Seasoning, Garlic, Salt & Pepper)

  • Cooked Bowtie Pasta

  • Diced red onion, bell pepper and cucumber

  • Drained and rinsed chickpeas

  • Washed cherry tomatoes

  • Greek Pasta Salad (Cooked pasta with onion, bell pepper, cucumber, feta, chickpeas and tomatoes)

    Chia seed jam is one of my favorite things to make in the summer because you can use whatever berries are on sale to make it and it can be used so many different ways. This week I used it for my breakfasts and ate it on top of protein waffles and mixed in with my overnight oats I had left from last week’s prep.

Most of my lunches this week were the pasta salad mixed with a big bowl of arugula and some of the vinaigrette. I also made a greek salad in a jar for one day with all of the extra prepped items which was awesome because on a day where I was running around, I could just dump, mix and lunch was served! I also used some of the extra cooked pasta to make a warm pasta dish a couple of days. I sautéed some of the red onion, bell pepper and tomatoes that I had prepped in some olive oil along with fresh garlic and spinach before adding the pasta.

The best part about this week’s prep is that I have a lot leftover. I have 3/4 of the chia jam, 1 1/2 huge containers of cooked pasta and some of the prepped veggies left. This makes it easier to make meals this coming week which is convenient with the holiday.
